Inspections and certification of DPO status are entrusted to IFCQ Certificazioni, an organisation chosen by the Consortium and monitored by the Italian Ministry for Agricultural, Food and Forestry Policies. This body checks and certifies correct application of the Production Specifications by all the parties involved in the production chain (farmers, slaughterhouses, ham factories and slicing workshops), as well as the requisites and the specific characteristics that the product must have in order to use the designation “Prosciutto di San Daniele”. The inspections involve all the parties in the production chain and are compulsory according to Italian Law and European Union Regulations
