Far more than just a distinguishing sign

The fact that the “trotter” is left in place as a distinguishing sign of Prosciutto di San Daniele is part of the traditional process carried out in San Daniele del Friuli and enables the biological integrity of the leg of pork to be maintained. What is more, keeping the whole joint intact facilitates drainage of the moisture even from those parts from which it is most difficult in relation to the force of gravity.
